Alex' Perfect Curry

Fragrant Fish Curry

1 tbsp sunflower oil
1 large onion cooked to melting
1 tsp salt

1 tsp chilli flakes
2.5 cms shredded fresh ginger
4 cardamom pods (bash with your rolling pin)
1 cinnamon stick min 5cm
3 cloves

4 cloves garlic
1/2 tsp turmeric

1 tsp English mustard
1 tin coconut milk
1 tsp salt (optional)

Reduce for 10 mins.

2 basa or 2 salmon fillets.
Poach until cooked through.

Serve with Fragrant Rice or chips.
