Bob’s Perfect Curry
Ingredients
Pork Curry with Apple1 tbsp coconut oil for frying
1 large onion cooked to melting*
1 tsp salt

2.5 cms shredded fresh ginger
2 tsp chilli flakes 🌶 🌶 or to taste
1 tsp English mustard
3 cloves crushed garlic
Paste:
1 tsp garam masalla
1 tsp ground cumin
1 tsp ground coriander
1 tsp turmeric
Keep adding water
4 x 440ml tins cider (1 for cooking plus 3 for chef)
1 tbsp sugar
Simmer until reduced and then keep adding water
750g pork (shoulder is good - with veins) I bought Aldi.
2 or 3 green apples - peeled and sliced into wedges
Simmer 1.5 hrs or until the pork is tender - keep adding water to avoid burning
1 tin coconut milk
Reduce to your preferred consistency - about 20 mins.

Kids friendly for the culinaryly adventurous. Use less chilli if you wish.
Serve with Felix’ coconut rice including a handful of cashew nuts added at the start*.
