Everyday Pasta Sauce

1 onion cooked to melting
1 red pepper
1 yellow pepper
1 tsp fresh thyme leaves or 1 tsp dried thyme
1 tsp fresh rosemary leaves or 1 tsp dried rosemary.
1 carrot diced
2 celery sticks diced
150ml red wine
4 cloves garlic
1 courgette diced
50g pitted green olives plus 2 tbsp of brine
100g mangetout or sugar snaps halved
50g jarred artichokes
1 tin chopped tomatoes
1tsp sugar
1tsp salt
1tbsp white wine vinegar
Fresh black pepper and freshly grated parmesan to serve
