Fragrant Fish Curry

1 large onion cooked to melting
🌶 1 red chilli or 1 tsp chilli flakes or to taste
2.5 cms shredded fresh ginger
4 garlic cloves
1 stick of lemongrass (tough outer removed)
1 tsp turmeric
1 star anise
1 tsp allspice
1 tsp sugar
1 tsp salt
1 400g tin coconut milk
2 basa or salmon fillets defrosted
Juice of 1 lime (omit if serving with Lemon Rice)
Top with chopped or ripped coriander leaves
