Grindley's Perfect Curry
Ingredients
Thai Green Curry1 large onion to melting
1 tsp salt
3 green chillies deseeded
4 cloves garlic crushed
2.5 cms grated fresh ginger
1 chicken stock cube in 250ml water
Simmer 10 mins
Blend in a little olive oil or coconut oil:
30g fresh basil or spinach
30g fresh coriander
2 tbsp fish sauce
1 tin coconut milk
2 tsp green peppercorns
2 tsp pumpkin seeds
1 tsp brown sugar
1 tbsp lemon juice
simmer 10 mins
4 skinless chicken thighs cut into 3cms pieces and presealed.
Simmer 10 mins
Serve with Basmati Rice.
