Jack’s Perfect Salsa (and Chutney)

This recipe covers both a Salsa for Mexican dishes or as a relish to spice up any dish or sandwich. Or a Mango Chutney as an accompaniment to dry curry dishes, meat or chicken

1 tbsp sunflower oil
1 large onion cooked to melting
1 tsp salt

2.5 cms grated fresh ginger
1 fresh chilli 🌶 or 1 tsp chilli flakes or to taste 👹

1 clove crushed garlic
1/2 tsp cumin

1 tsp sugar
2 tbsp tomato puree (for Salsa only)
100ml White Wine Vinegar or to taste

1 chopped red and 1 chopped yellow pepper (Salsa) OR
2 chopped firm mangos (Mango Chutney)

Simmer 1 hr. Keep adding water to avoid burning then reduce to a thick relish.
