Nigel’s Perfect Stew
Ingredients
Pork Goulash1 tbsp sunflower oil
1 leg onion cooked to melting
1 tsp salt
1 tsp chilli flakes 🌶
3 cloves garlic
Paste:
2 tbsp Paprika (Smoked Paprika if you wish).
1 tbsp white wine vinegar
1 tin chopped tomatoes
1 tbsp tomato purée
1 tsp sugar
2 vegetable stock cubes in 250ml hot water
Simmer 1/2hr adding water as required.
700gms cubed pork
Simmer 1 hr - keep adding water
1 sliced red pepper - optional
1 sliced green pepper - optional
1 sliced yellow pepper - optional
Simmer until peppers soften and pork is tender. Add water or reduce to your desired consistency.
Serve with rice, chips, crushed or mashed potatoes.
