Sujata Limbu's Perfect Curry

Chicken Curry

1 tbsp sunflower oil
1 large onion cooked to melting
1 tsp salt

1 bay leaf
3 cardamom pods
6 cloves
3 cms cinnamon stick
1 tsp black peppercorns
2 slit fresh chillies 🌶 🌶
1 chopped fresh tomato

Simmer tomato to a paste - adding water to prevent burning.

3 tsp ginger/garlic paste
1 tsp chilli powder
1/4 tsp turmeric

Simmer 20 mins adding water to avoid burning.

500g chicken (I used on the bone but this takes longer to cook)

2 tsp garam masala
2 tbsp greek yoghurt

Simmer 20 mins. Adding water to prevent burning and for desired consistency.

Garnish with fresh coriander. 🙏
