Zaff's Perfect Curry

Zaff's Chicken Handi

1 tbsp ghee
1 large onion cooked to melting
1 tsp salt

4 cloves chopped garlic
3 chopped tomatoes

Simmer to a paste. Add water to avoid burning.

1.5 tsp ginger paste
1 tsp cumin seeds
1 tsp crushed coriander seeds
3 chopped green chillies

1 tsp turmeric
1 tsp chilli powder

4 cubed chicken thigh fillets

Cook 15 mins.

2 tbsp yoghurt
1 handful fresh fenugreek leaves or 1 tsp dried methi leaves

Add 1 tsp Garam Masalla and drizzle with fresh cream
