Felix' Perfect Curry

1 tbsp sunflower oil
1 large onion cooked to melting
1 tsp salt

1 tsp thyme
1 stick cassia bark or cinnamon stick
2.5 cms grated fresh ginger
2 tsp chilli flakes 🌶🌶
1 tsp cumin seeds
3 cloves

3 cloves garlic
Paste:
1/2 tsp fenugreek
1 tsp coriander

1 tsp garam masalla
1 tsp salt
1/2 tsp white pepper
1 tin chopped tomatoes

4 chicken thigh fillets - skin removed
1 tin coconut milk.

Simmer 20 mins or bake in the oven until tender.

Garnish ♥️ and serve with fresh coriander
