Ron’s Perfect Ragu

Ingredients
Prawn Carbonara with Peas

1 tbsp Virgin Olive Oil for frying
1 large onion to melting
1/2 tsp salt
3 slices chopped smoked streaky bacon.

4 cloves garlic
250ml white wine.
Reduce until sticky.

300ml Creme Fraiche
1 chicken stock cube in 100ml water from the pan of boiling pasta
2 tbsp finely grated Parmesan cheese.
lots of black pepper.

Simmer 10 mins.

200g defrosted frozen prawns 🍤
1 cup defrosted frozen peas

Simmer 2 mins

Add cooked Penne Pasta and coat with sauce. As an alternative to pasta - add pre cooked mussels (the shells will be open).

Add 2 slices smoked salmon torn into strips (optional).
1/2 tsp dried parsley
1 tsp lemon juice

Sprinkle with finely grated Parmesan, black pepper and serve with garlic bread.
