Adam's Perfect Curry

Beef Rendang

1 tbsp oil for frying
1 large onion cooked to melting
1 tsp salt

5 cms shredded fresh ginger
3 tsp chilli flakes
2 cloves
1 cinnamon stick
1 star anise

5 cloves garlic
2 tsp coriander
2 tsp cumin
1/2 tsp ground cardamom
1 tsp turmeric

1 tsp black pepper
2 tsp tamarind paste
3 stalks lemon grass bashed with a rolling pin

750g cubed lean beef

2 tins coconut milk
1 tbsp brown sugar

Simmer minimum 2hrs or until beef is tender. Alternatively use very lean lamb or chicken. Add the chicken after 1.5hrs for 20mins.

Garnish fresh coriander and serve with basmati rice.
