Akum Raj Perfect Curry

Ingredients
Lamb Bhuna

2 onions cooked to melting
1 tsp salt

1 tsp cumin seeds
1 tsp fennel seeds
4 whole cloves
1 cinnamon stick
3 cardamom pods
1 star anise
1 bay leaf
1 chopped tomato
1 tbsp ginger/garlic paste
3 tsp chilli flakes
1/4 tsp asafoetida

Fry until tomato goes mushy adding water to avoid burning

Paste:
1 tbsp ground coriander
1 tsp turmeric
1 tbsp garam masalla
1/2 tsp black pepper

Keep adding water to avoid burning. Stir constantly.

500g lamb. Excess fat removed.
1tsp salt (optional)
3 tbsp natural yogurt

Simmer min 2hrs until lamb is tender adding water and stirring constantly

Garnish ♥️ and serve with chopped coriander leaves.
