Barry’s Perfect Stew
Ingredients
Harissa Chicken1 tbsp sunflower oil
1 large onion cooked to melting
1 tsp salt
3 cloves garlic
Paste:
1 tsp ground fennel
3 tsp Harissa powder or paste (readily available Middle Eastern spice mix)
1 tbsp white wine vinegar
1 tin chopped tomatoes
150gms pitted olives
1 tsp sugar
Simmer 1hr adding water as required.
4 or 5 cubed skinless chicken thighs
400gm tin white cannellini beans including the water
Simmer 30mins or until chicken is cooked. Add water to achieve desired consistency.
Serve with plain basmati rice. 🧕🏻🤗😌
