Brad's Vegan Curry

Cashew Walnut and Chick Pea Curry

1 tbsp coconut oil
1 large onion cooked to melting (use the Chick pea water too)
1 tsp salt

3 cms grated fresh ginger
1 tsp chilli flakes 🌶
2 tsp cumin seeds

3 cloves garlic
2 tsp ground cumin
1 tsp turmeric
1 tsp garam masalla
1/2 tsp salt optional
1/2 tsp black pepper

Fast simmer 30 mins. Keep adding water.

2 handfuls walnuts
2 handfuls cashew nuts.

Fast simmer 15 mins. Keep adding water.

1 tin coconut milk.
1 tin Chick Peas

Simmer 15 mins or more for a drier consistency or until oil separates .

For alternatives - experiment using other spice combinations.

Serve with a dry consistency as a side dish.
