Chicken Curry

1 tbsp sunflower oil
1 large onion cooked to melting
1 tsp salt

2.5 cms grated fresh ginger
2 fresh chillies 🌶 🌶 or 2 tsp chilli flakes

3 cloves garlic
3 tsp cumin
2 tsp coriander
1/2 tsp turmeric

1 tsp garam masalla
1 tsp salt (optional)
1 tsp sugar
1 tin chopped tomatoes*.

*For a creamier alternative substitute with a tin of Coconut Milk.

4 chicken thigh fillets - skin removed.

For Chicken Saag add 240g fresh spinach. Reduce to desired consistency or bake in the oven until tender.

For veggie option simply replace chicken with vegetables of your choice.
