Cookey's Perfect Ragu

Sausage Ragu For The Boys

1 tbsp Sunflower Oil for frying
1 large onion cooked to melting
1 tsp salt

1 celery stalk thinly sliced
1 carrot in shavings

1 tsp fennel seeds
1 star anise
1 tsp thyme
1 tsp rosemary
100g smoked streaky bacon.
2 tsp chilli flakes

6 cloves garlic
250ml red wine.

6 thick pork sausages

1 tin chopped tomatoes
2 tbsp tomato purée
2 vegetable stock cubes in 250ml water.
lots of black pepper.

Simmer slowly 2hrs. Cut the sausage into slices after 1hr. Serve with Penne and Parmesan
