Dean's Perfect Ragu

Ingredients
Ragu with meatballs.

Virgin Olive Oil for frying
1 large onion to melting
1 tsp salt

2 celery stalks thinly sliced
1 carrot in shavings

1 tsp fennel seeds
1 star anise
1 tsp thyme
1 tsp rosemary
1 tsp parsley
100g pancetta or smoked streaky bacon.

6 cloves garlic
250ml red wine.

500g beefsteak meatballs

1 tin chopped tomatoes
400ml passata
2 beef stock cubes in 250ml water.
lots of black pepper.

Simmer slowly 2hrs. Serve with spaghetti or linguine.
