Dhama’s Perfect Curry

Ingredients
One Pan Chicken Satay

1 tbsp sunflower or coconut oil
1 large onion cooked to melting
1 tsp salt

1 stick cassia bark or cinnamon stick
2.5 cms grated fresh ginger
1 tsp chilli flakes 🌶 or to taste

3 cloves garlic
Paste:
1 tsp cumin
1 tsp coriander

1 tin coconut milk
1 tsp sugar
1/2 tsp salt (optional)

Simmer 10 mins

4 chicken thigh fillets - randomly cubed and skin removed

Simmer 20 mins

2 tbsp crunchy Peanut Butter

Simmer 5 mins. Add juice 1 lime for kids. 2 for adults.

Garnish toasted Sesame seeds.
