Everyday Ragu

1 onion cooked to melting
1 tsp salt

1 carrot into shavings
2 celery sticks thinly sliced

1 red pepper
1 yellow pepper
1 tsp thyme
1 tsp rosemary.

4 cloves garlic
150ml red wine

50g pitted green olives halved
2 tbsp olive brine
100g mangetout or sugar snaps halved
50g jarred artichokes
1 tin chopped tomatoes
2 veg stock cubes in 250ml water
1 tsp sugar
1/2 tsp salt (optional)
1 tbsp white wine vinegar

Simmer absolute minimum 1hr. For a more ratatouille-like consistency keep adding water and simmer 2hrs.

Add undercooked Penne to soak up remaining juices.

Fresh black pepper and parmesan shavings to serve
