Felix' Perfect Ragu

1 large onion cooked to melting
1 tsp salt

2 thinly sliced celery stalks
1 large carrot in shavings

1 red pepper
3 rashers smoked bacon
2 star anise
1 tbsp thyme
2 tbsp tomato puree

5 garlic cloves
250ml red wine 🍷

250g pork mince
250g lean beef steak mince
or try 500g turkey mince if you prefer.

1 beef stock cube and 1 chicken stock cube in 250ml water
500g pasatta
1 tsp sugar
1/2 tsp salt (exclude if using olive brine below)
Lots of black pepper.

Plus optionally:
50g sliced button mushrooms
50g sliced pitted green olives
1 tbsp green olive brine

Simmer very slowly. 2hrs. Add Luinguine or pasta of your choice. Garnish with a little Il Divo?
