Graham’s Perfect Stew

Ingredients
Lamb Stew with Za’atar

2 onions cooked to melting
1 tsp salt

2 thinly sliced celery stalks
1 large carrot in shavings

3 garlic cloves chopped

1 tbsp Za’atar (Middle East spice mix. Morrisons)
3 tsp dried mint

Fast simmer 1hr min until carrots and celery break down. Keep adding water at all times.

600gms cubed lamb

1 tin chopped tomatoes
1 tsp sugar
2 vegetable stock cubes in 250ml hot water

1 large sweet potato cut into 2.5cms cubes

Simmer 1.5 hrs until potato softens and lamb is tender.

1 tin Chick Peas

Simmer 20mins to achieve your preferred consistency.

Serve garnished with chopped fresh mint.
