Jeremy’s Perfect Curry
Ingredients
Chicken Curry with Brandy2 tbsp coconut oil for frying onions
1 large onion cooked to melting
1 tsp salt
2.5 cms shredded fresh Ginger
1 cinnamon stick
1 tsp chilli flakes 🌶
Keep adding water
4 cloves garlic
Paste:
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground cardamom
1 tsp turmeric
Keep adding water 1hr
1 tsp garam masala
100ml Brandy
1/2 tsp salt
1/2 tsp black pepper.
Simmer until sticky
500g Chicken Mini Fillets cut in half
50g butter
2 tbsp Greek yoghurt.
Add water then reduce to your desired consistency and until chicken is cooked - about 20 mins.
Highly indulgent dish - serve in small portions.
Serve with roasted potatoes:
1. Boil in water with 1 tsp turmeric.
2. Drain and coat with 1 tbsp coconut oil (melt in microwave 1 min)
3. Sprinkle to taste with cumin seeds and chilli flakes in ratio 2:1.
4. Season to taste.
5. Roast until crispy.
