Jyo's Perfect Curry

Ingredients
Potato Curry

1 tbsp Ghee
1 onion cooked to melting
1/2 tsp sugar

1 tbsp ginger/garlic paste
2 chopped fresh tomatoes

Saute to a paste adding water as required to avoid burning.

Paste
1/2 tsp chilli powder or to taste
1/2 tsp turmeric
1 tsp garam masalla

Simmer 15 mins. Add water to prevent burning.

Whisk 3 tbsp yoghurt 1 tbsp besan (gram flour) until lump free and add.
Stir continuously 15mins to prevent sticking or burning. Add water for desired consistency.

Add 500g par boiled and fried potato wedges.

Garnish with fresh coriander. 🙏
