Nick’s Perfect Curry
Ingredients
Thai Chicken Massaman Curry1 onion cooked to melting in 1tbsp coconut oil
1/2 tsp salt
2.5 cms grated fresh ginger
2 tsp chilli flakes 🌶 🌶 or to taste.
1 tbsp fennel seeds
3 cloves
10 cloves garlic
Paste:
2 tsp ground coriander
Fast simmer 30 mins. Keep adding water.
Blend:
30g fresh coriander
2 lemongrass stalks tough outer removed
2 tbsp fish sauce (eg Blue Dragon) not fish paste.
1 chicken stock cube in 250ml hot water
Simmer 10 mins
400g chicken mini fillets
1 white potato cut into 1-2cms cubes
1 sweet potato cut into 1-2cms cubes
1 tsp sugar
1/2 tsp black pepper
1 handful peanuts
Simmer 10 mins.
1 tin coconut milk.
Simmer 15 mins or until potato is cooked. Add juice of 1 lime.
Garnish with fried sliced shallots and serve with sticky Jasmine rice.
