Paneer Saag Curry

Ingredients
1 lge onion cooked to melting
1 pack Paneer (Indian Cheese) cut into 1cm cubes
If unavailable substitute with Greek Haloumi cheese and omit Soy Sauce.
4 garlic cloves
1 sliced fresh chilli 🌶 or 1 tsp chilli flakes
2.5 cms shredded fresh ginger
100g fresh spinach
Juice of 1 lime
1 vegetable stock cube
1 tsp sugar
1 tin coconut milk
2 tbsp soy sauce
1 tsp turmeric
1 tbsp ground coriander
Garnish with sliced fresh chilli 🌶 seeds removed.
Season ♥️ and serve 🙏
Main course for vegetarians. Exclude coconut milk for a side dish.
