Paneer Saag Curry

1 tbsp sunflower oil
1 lge onion cooked to melting
1 tsp salt

1 sliced fresh chilli 🌶 or 1 tsp chilli flakes
2.5 cms shredded fresh ginger

4 garlic cloves
1 tsp turmeric
1 tbsp ground coriander

1 vegetable stock cube in 100ml water.
1 tsp sugar
2 tbsp soy sauce

1 tin coconut milk
Juice of 1 lime

1 pack Paneer (Indian Cheese) cut into 1cm cubes. Fry separately first for more texture and colour.

If unavailable substitute with Greek Haloumi cheese and omit Soy Sauce.

200g fresh spinach

Garnish with sliced fresh chilli 🌶.

Main course for vegetarians. Exclude coconut milk for a side dish.
