Pete's Perfect Curry
Ingredients
Coriander Chicken1 tbsp coconut oil
1 onion cooked to melting
1 tsp salt
3 cms grated fresh ginger
1 tsp chilli flakes 🌶 or to taste
1 tsp fennel seeds
1 tsp cumin seeds
4 cloves garlic
Paste:
3 tsp ground coriander
1 tsp cardamom powder
1/2 tsp black pepper
Simmer 1.5hrs. Keep stirring and adding water.
Blend:
60g fresh spinach with
60g fresh coriander in 250ml water
Simmer 20 mins
500g chicken mini fillets
Simmer 15 mins.
1 tbsp Greek yoghurt
1 tbsp lemon juice
Simmer 5 mins.
Garnish ❤️ and serve with basmati.
