Thai Green Curry
Ingredients
1/2 onion cooked to melting1/2 tsp salt
2.5 cms grated fresh ginger
2 fresh red chillies 🌶 🌶
4 cloves garlic
Paste:
1tsp ground cumin as a paste.
Simmer 10 mins.
Blend:
30g fresh basil
30g fresh coriander
2 lemongrass stalks tough outer removed
2 tbsp fish sauce (I use Blue Dragon brand. Do not use fish paste)
1 chicken stock cube in 250ml hot water
Simmer 5 mins
400g chicken mini fillets
100g sugar snap peas or mange tout
1 red or yellow pepper
Simmer 10 mins.
1 tin coconut milk.
Add juice of 1/2 lime.
Simmer 10 mins.
Serve straight to the table with wedges of lime.
Garnish ❤️ and serve ⛩
Fresh mackerel is a terrific alternative to chicken for fish lovers.
