Thai Green Curry

1 onion cooked to melting
4 cloves garlic
5 cms grated fresh ginger
2 fresh red chillies chillies 🌶 🌶 or to taste.
2 lemongrass stalks tough outer removed
1 red pepper
1tsp cumin powder
30g fresh basil
30g fresh coriander (save half for garnish)
1 tin coconut milk
2 tbsp fish sauce
1 chicken stock cube melted in hot water
100g sugar snap peas or mange tout
4 chicken thighs skins removed
1 tsp salt
juice of 1/2 lime
Top with torn fresh coriander and crushed salted peanuts.
Serve with wedges of lime.
