Wayan's Perfect Curry

Ayam Kare - Balinese Chicken Curry

1 small onion cooked to melting
1 tsp salt

2 cloves garlic crushed
2.5 cms grated fresh ginger
2 sliced red chillis
1 chicken stock cube in 250ml water.

Simmer 10 mins

1 tsp turmeric
1 tsp curry powder
1 tsp Chinese Five Spice powder
2 tbsp fish sauce
1 tsp soy sauce

1 tin coconut milk
1 tsp brown sugar
1 tbsp lime juice

simmer 10 mins

2 chicken breast cut into cubes.
1 pre boiled potato cut into cubes
Handful green beans.

Simmer until chicken is cooked 15 mins and sauce thickens.

Serve with Steamed Rice and sliced chillis.
