Perfect Curry - Coriander Chicken

All Felix' 'Secret Ingredient' recipes follow the same simple method and have a 'compacted method video'. Unlike other recipe videos these are unique in that they are more instructional and some say they are as therapeutic to watch as the dishes are to cook!

Ok. So now you're familiar with the method for making authentic curry from scratch without the use of excessive amounts of oil.

You've probably also experimented with different spice combinations and created your own Perfect Curry? Your 'signature' dish?

This is what Pete says about his recipe:

If you're lucky enough to have an Asian supermarket nearby the bunches of coriander are inexpensive and the size of a bunch of celery.
I don't have one and therefore I substitute some coriander for fresh spinach and then add extra ground coriander. This is shown on the recipe.
The method is pretty easy. I like a fairly dry dish with coriander coating the chicken, but if you prefer more gravy - just add a little water.
The only pitfall is not to over cook the coriander because it loses it's colour. I hope you will like it!

This dish looks very fresh and clean tasting Pete - a quality normally attributed more to a Thai curry. I suspect there's also plenty of flavour to linger in the mouth. I also love the use of coconut oil. Beautiful!
